There is just something about Fall and pumpkin spice that I love. I have to admit that I am not a fan of removing the pumpkin seeds from the pumpkin.
It is just gooey! Ugh! For the past few years, we have had pumpkins out as decorations and I didn't cut them because I just didn't want to feel the guts of the pumpkin.
I am getting over this slowly but surely but it is still a bit ugh to me. Do you enjoy carving pumpkins?

The perfect fall snack!
Ingredients
- Pumpkin seeds, cleaned
- Coconut oil
- Pumpkin Pie spice (Cinnamon, nutmeg, cloves, allspice and ginger)
- Salt
Optional - cayenne pepper
Equipment Needed

Teaspoon/measuring tools
Large Bowl - We are big fans of this glass batter bowl that has a handle. It makes it easy to mix ingredients and keeps the mixing bowl steady on the counter.
Parchment Paper - I love that I can use parchment paper to help make clean-up a breeze.
Baking Sheets - We are huge fans of these baking sheets with sides. You don't have to worry; you will remove the pumpkin seeds from the oven and have them slide right off. Make sure to use a big enough baking sheet the pumpkin seeds can be in a single layer while they bake.
Heat resistant potholders- A couple of years ago we had a fire scare when we didn't realize we had turned a burner on and a cloth potholder caught fire. Thankfully we walked by the kitchen and saw the smoke and were able to get it out ourselves. Since then we have only used these heat-resistant potholders.
Recipe Tips
Don't forget to preheat oven.
Make sure your seeds are free of any pumpkin guts/flesh and are completely dry - pat them down with a paper towel if necessary.
You can add the oil in one of two ways: add the seeds to a bowl and mix them with the oil, or place the seeds directly on a lined baking tray and drizzle with the oil. Either way works great - and the second method saves on dishes!
I use a cookie sheet with sides so the pumpkin seeds can not fly off when moving the pan.
Parchment Paper makes it really easy to pour the pumpkin spiced roasted pumpkin seeds into an air tight container at room temperature for storage.

Ingredients
- 1 Cup pumpkin seeds cleaned
- 2 teaspoons Coconut Oil Melted
- 2 teaspoons Pumpkin Pie Spice
- ¼ Teaspoon Salt optional

Instructions
Set your oven to 400F.
Make sure your seeds are free of any pumpkin bits and are completely dry - patting them down with a paper towel if necessary.
You can add the oil in one of two ways: add the seeds to a bowl and mix them with the oil, or place the seeds directly on a lined baking tray and drizzle with the oil.
Either way works great - and the second method saves on dishes!
Sprinkle the pumpkin spice onto the seeds and roast for 5-10 minutes until the seeds take on a golden color. Stir halfway through to ensure even roasting.
If adding salt, sprinkle it on after you've removed the seeds from the oven.
